Spinach & Ricotta Shells via Rachel Ray
Pizza Night!
If you haven’t tried that Parmesan Crusted Tilapia, you should check it out! It’s in the frozen fish section, and it’s about $5! It’s so good!
I’m excited to be trying out a new Spinach Pasta dish, cooking with two things I’ve NEVER tried… shells and ricotta cheese! It also amuses me when I enter the grocery store looking for a seemingly normal item, though one I’ve never searched for before, and I have to brainstorm where on earth it would be!
This time it was the Ricotta that got me. I searched in the cheese. Then the cream cheese. Then the deli cheese.
Then I stood in line and waited my turn to ask the deli worker who didn’t appear to be someone who had ever used Ricotta either. She pointed me to the case of deli cheese and shrugged to say, too bad for ya and your big idea for a new recipe.
Thankfully, some sweet southern saint overheard my plight and came over to tell me that the Ricotta cheese was NOT in fact with any other cheese. It was with the milk and the sour cream.
Go figure.
But at least I found it and will be able to give the Spinach & Ricotta Shells dish a try. I am adapting this one to make it easier {big shock!} so stay tuned to see if my adaptations will be a success! :)

What are you eating this week? Am I the only one who has to go on random “new” ingredient searches?? It has a way of making you feel quite idiotic!
My family loves the Tilapia. It is so yummy and even my toddler will eat it. He can eat a whole piece by himself. It is yummy and good for you – and super easy to fix. What a great combo!! Loving this meal planning. We are saving so much time & money. And eating great food :)
