What’s Cooking… Poppy Seed Chicken!

This Poppy Seed Chicken recipe is another fave in our house.  I am ALWAYS a fan of a dish when my little ‘don’t-wanna-eat-anything-other-than-a-chicken-leg-Wade’ will eat it.  :)  Unfortunately, now Davis has joined the Picky Eater bandwagon.  Apparently they’ve been recruiting.   :(

So I am glad when a new meal is a hit! 

Since I’m all about embarrassing true confessions, before making this one the first time I had never bought poppy seeds before.  Just like the feta, I didn’t even know where to find in the grocery store!  {It’s in the spice aisle, fyi.}

I found this recipe originally over at Sisters Stuff though, of course, I tweaked it and made it easier my own.   {I know Kristi is so proud of me right now!}

ingredients

  • Can of Chunk Chicken or 3-4 Chicken Breasts boiled & cubed
  • 8 oz Sour Cream
  • 1 T Poppy Seeds
  • 1 can Cream of Chicken
  • 1/2 stick of butter {melted}
  • 20 or so Ritz Crackers

directions

Drain Chicken and pour in the bottom of 2 quart baking dish.

Mix Sour Cream and Cream of Chicken together in a medium bowl.

Spread mixture on top of chicken.

Crumble crackers in separate bowl.  Add poppy seeds and melted butter.

Mix together well and sprinkle on top.

If you’re prepping ahead, cover with plastic wrap and stash that baby in the fridge for some quick dinner awesomeness

At meal time, Bake uncovered at 350 degrees for 30 minutes. 

And wala!

    This was one of my favorite meals when I was a teen. I still make it these days, and we love it! Glad to see someone else is a big a fan as I am :)

    I've had/made this before– minus the Poppy Seeds. and maybe plus something else– I'll have to look. It is good. I don't have poppy seeds either. I like lemon poppy seed muffins/bread. But do the poppy seeds actually taste like something?

    I make this recipe once a week for my kids lunches. I buy a rotisserie chicken instead of canned and I don't always put the poppy seeds because they can be quite expensive. I use FF sour cream, RF soup, and RF Ritz to lighten it up. Weight Watchers approved. It's definetly a favorite around here. Love reading your post. I too plan every meal but I prepare it the day before since I'm home and my kids are in school now. Try to keep it homemade and healthy. My kids are so spoiled. They only take sandwiches on Mondays.
