This is the week of birthdays all around! I actually share a birthday with my nephew, Miller, too. :) I love birthdays, and I’m of the mantra that you should really celebrate these events all week long, you know. ;)
Chris and I even had a blast horseback riding this weekend!
Neither of us had been in ages, and we ended up on feuding horses… Rapunzel and Cherokee. :)
According to our guide, my horse was the “herd boss,” and I needed to keep her away from Cherokee since she was prone to biting him, ha! :)
We took an hour long trail ride that was simply beautiful. We were plodding through streams and up and down hills. Toward the end of our ride, we heard a rush in the trees, and then all of sudden the rain came. We finished our ride in a very cold rain! It was crazy but fun.
In honor of all things birthday, I picked two meals I love for Monday and Tuesday… Shrimp & Feta, and Chicken Spinach Bake.
We celebrated my birthday over the weekend, but I’m going to make sure I still get to chow down on some kind of sweet treat tonight even if I do have to blow out a candle to get to it. :)
31 minutes to prep FOUR meals with a bit of help from hubby again this week…

Renee, what type of freezer pans are you using there? I’ve had the hardest time finding the right size/depth for my freezer meals! Totally pinned that Feta Shrimp recipe, it looks awesome. Happy Birthday!
They are actually called cake pans. I found them at Walmart in the cake mix aisle. There’s a whole foil pan section with the bigger, deeper pans too. These come in packs of 3 for about $3 so not too bad especially if you wash and reuse them. They also have the rectangle cake pan size too. :)
And the Shrimp & Feta is my current FAVORITE!!! So easy and DELISH!

Happy Birthday!!!! and I love those horseback riding pictures. I must say I am a little jealous I have never been horseback riding and it looks like a lot of fun. I would think it is peaceful.I love nature if it was up to me I would live in a ranch were I could have horses and go riding a lot. LOL!!!
