Menu Monday… Beating the Heat!

Up on the menu this week…

Monday… Asian Pork Chops

Tuesday… Crockpot Chicken Tacos

Wednesday… Teriyaki Honey Mustard Chicken

Thursday… Ham & Cheese Sliders

Friday… Birthday Dinner

Saturday… Pizza Night

Oh my, I am so enjoying the cooler weather these last few days!  The scorcher days are just killers! I’m doing my best to beat the heat in the kitchen this week.  I am attempting to go as oven-LESS as possible.  We’ll only be using the oven twice!  Wahoo!   

The Chicken Tacos are crock pot style and I can’t wait to try them.  You cook the chicken all day with the salsa! It just sounds so tasty… hoping it will deliver.  To prep this ahead, I combined all the ingredients {chicken, jar of salsa, cumin, onion, & garlic} in a gallon sized ziploc bag and put in the fridge.  On Tuesday morning, I will pour the bag into the crockpot and wala… dinner is cookin’!

Another meal I’m anxious to try is the Ham & Cheese Sliders

Oh.My.  Do these look divine or what?  I only hope mine will look and taste half as scrumptious. :)   It’s a crazy twist on plain old ham and cheese.  You actually pour your melted butter & poppy seed mixture OVER your rolls and BAKE!  Mmmmmmm! 

To prep this one ahead, I assembled the rolls on a cookie sheet and covered with foil.  I mixed up the butter/poppy seed mixture and put in a quart size ziploc bag.  On Thursday, I will warm the butter mix in the micro, snip the corner off the bag and pour over the rolls before sliding them in the oven.  Easy Peasy!

    I'm so inspired by your meal prep idea, I might just have to try it next week and see how it goes. We're expecting our 2nd baby boy any time now and I think it would save me so much time to not have to worry about what's for dinner every night. Thanks!

    We just made a similar chicken taco recipe last night I used Salsa verde anda whole chicken and then shreded the meat off the bone! Froze the remainder of the meat and then prepared chicken enchilada stack and froze it!

    for the sliders – did you just buy deli ham or what? I usually want "real" ham :) like you get at Thanksgiving, etc. for that. Maybe it is time to pull one out of the freezer and bake it for company and then save the leftovers for sliders! :)

    I have them saved on pinterest too and can't wait to try them! and Thanksgiving is way too far away! ;)

    @Christina, Yeah, I did deli ham though the recipe did call for the "real" ham. I could've bought one of those $5 smithfield hams but figured this would be cheaper, easier and still yummy! :)
