Something big happened this week. I {little ol’ me!} got a shout out from Michelle at Five Dinners One Hour! The blog that inspired the drastic change in my cooking plan.
*Shriek*
Seriously, I was so thrilled to be mentioned! I got some new followers too and am now up to the BIG FIFTY!!
{Wahoo, Tati! You were #50!}
I love it when I see there is a new follower on my little friend connect on my sidebar. I do enjoy the writing and the oversharing, but it really helps to think that people are actually reading it!
Speaking of, can I pause a moment to be obnoxiously pushy and say if you happen to be a reader but haven’t clicked the illustrious Follow button yet, I would LOVE YOU FOREVER if you wouldn’t mind taking two seconds to push that button!
Okay… back to the previously scheduled post… :)
We got a new toy this week! It was actually an anniversary present, but it was on back order so it didn’t arrive until this week.
It’s the Ninja Blender System. A totally rad blender on steroids that also doubles, no, triples as a food processor and dough machine. I can’t wait to put it to use!
I picked up the ingredients for a Chocolate Mousse I hope to try one night this week for a fun dessert. It’s just Heavy Whipping Cream and Chocolate Syrup.
Here’s the menu this week…
Monday… Tacos {carried over from last week}
Tuesday… Roasted Shrimp
Wednesday… Crunchy Baked Tenders
Thursday… Grilled Salmon {Eek! Nervous about my first time making Salmon!}
Friday… Pizza Night
Saturday… Cheeseburger Sliders
Sunday… Crockpot Chicken
No leftover night this week since we carried over the Tacos from last week. They were on the menu for Saturday night, and since we were out shopping for the evening, we ended up just grabbing a $5 pizza from Little Caesars.
My longsuffering hubby actually agreed to shopping with all the kids in tow on a Saturday night at Concord Mills to search for cheap, adorable, and matching Easter outfits for the kids. Criteria NOT in order of importance. :)
It was worth it, because I think we did a good job of achieving our goal! Can’t wait to see my little cuties all dressed up. :)
Just barely made it over an hour this week for my prep time…
6 minutes to gather everything…
And 1 hour 1 minute to get it all prepped and cleaned up…
I’m using THREE new recipes this week. Sorry, honey!
Crossing my fingers for some wins!

Yay! Can't wait to hear about how your salmon turns out! It can overcook easily so just watch how long it cooks! Your menu sounds great!! I'm always in awe of moms and how they can do SO much in so little time!!
I'm really enjoying your menu Monday posts…and your blog! Keep up the good work!
