M.S.E…. Day Two

Day Two arrived for my experiment, and on the menu was Ranch Chicken.  This is one of my oldest recipes!  I got a great Betty Crocker cookbook as a wedding present from my fellow teacher and roommate.  It was all about the basics and had step by step instructions for lots of things.  I guess she knew I needed all the help I could get.   She was right. :)  {If you’re reading, Thank you, Charity!}

In the cookbook was this easy and tasty recipe for Ranch Chicken.  The recipe calls for cooking it on the stove, but it can be baked in the oven as well.  I prefer baking in the oven whenever I can, since it is MUCH easier for me to stick something in the oven and WALK away!

I must harp again on the wonderful feeling of NOT having to worry about dinner all day long.  It. is. a. glorious. feeling.

Seriously!

On this particular night, we went to the library for a story/craft time they had for 5-8 year olds.  It was our first time going, and I think Haylee really enjoyed it.  As a side note, I was very {and pleasantly} surprised that the Wadester did really, really well sitting quietly {yes, I said QUIETLY} for the stories.

ANYWAY! My point is that this class started at 4:00, and we didn’t get back home until around 5:30.  {We stuck around and chatted with friends.  I think the class is only about 30 minutes.} If I had not already had dinner ready to go for me in the fridge, most likely it would have been a drive thru or frozen pizza night.  Imagine my Martha Stewart glee when I could walk in the door, turn on the oven and open the fridge to pull out our dinner.

The Official Review…

This is an old and familiar recipe to us, and it was one I was a bit worried about since the chicken is dipped in ranch dressing and then coated with bread crumbs.  I wondered if the bread crumb coating would become soggy in the fridge after a day or two. 

As far as I could tell, though, the taste was the same.  Yummy!

Chris wasn’t hungry when he got home {he gets home around 7:30 for the moment… hoping that changes soon!} so no opinion from him. Apparently, he doesn’t realize the grave importance of his involvement in this experiment!

It was a hit with the kiddos, which is always cause for celebration.  I did have to convince Wade to at least try it though. In fact, Wade hadn’t even taken a bite when Haylee had finished hers. He was busy chowing down on his corn.  After telling him to take a bite and “see if it tastes like chicken nuggets” {lol} I told Haylee she could have one of his pieces.

By the time he finished chewing the bite, he had changed his tune and was fussing at Haylee to give him his piece of chicken back. 

Overall…

Yum,  Yum!
