Are you a big Fish eater?
Sorry, Fish Sticks do not count.
Fish is supposed to be good for the heart and a great regular part of our diets. It’s a great, healthier “meat” alternative too. :)
In the past year of my MAJOR cooking learning and growth, I found a few GREAT Fish recipes that met my all important criteria.
Easy.
Delish.
I still remember the SHOCK I felt when my uber picky Wadester ate a bite of Salmon and said “Yum” instead of the “Yuck” I was FULLY and wearily expecting. :)
Another Fish winner this year was the Broiled Parmesan Tilapia! As my friend and cooking expert, Kristi says, “Anything with Parmesan is delish!”
I think she’s definitely right about that!
This one is YUM-O!
- 2 lbs Tilapia Fillets {I buy the bag of frozen, vacuum sealed fillets at Walmart for about $5}
- 1/2 cup Parmesan Cheese
- 1/4 cup Butter
- 3 tbs Mayo
- 2 tbs lemon juice
- 1/4 tsp basil
- 1/4 tsp ground black pepper
- 1/8 tsp onion powder
- 1/8 tsp celery salt
Preheat your oven to Broil and lay out your fish on a sheet lined with foil. Trust me, you’ll want the foil, so you’re not scrubbing your pan all night.
In a small bowl, mix the remaining ingredients.
If you are awesome and are prepping your meals ahead, stop at this point, cover your pan and bowl and stick them in the fridge until the night you are ready to prepare. :)
Slide your sheet in the oven and broil for 2 to 3 minutes. Take out, flip over, and brush or spoon on the parmesan mixture. Broil for 2 more minutes. After 2 minutes, take out, flip over, brush other side with the mixture, and broil for 2 additional minutes.
The good news is it will be done in about 6 minutes. The bad news is you will pretty much feel like you are cooking on the stove because you’ll need to be hanging around at the stove during those 6 minutes.
But, really. Come on. If dinner is ready in 6 minutes, you really can’t complain, right?!
One common warning when cooking fish is to not overcook it! So err on the low side!
This is the yummy goodness that will greet you!
I know it looks like a hot mess, but looks aren’t everything! I bet you’ll be so distracted by the amazing aroma, you won’t even notice! {And you’ll be patting yourself on the back for remembering to use foil.}
Even if you are NOT a “fish person” this still is one you should give a try!
It won’t disappoint!! It is tender and delicious and will melt in your mouth!

I LOVE Salmon…and Flounder…and Tilapia. I tread carefully because I do not like a fishy fish, lol!
I’m blessed because my kids have actually always loved fish (I can thank my MIL for that..! ;)) and not the fish sticks either…lol!=) Their favorites are Salmon and Tilapia (in that order) and I’m DEFINITELY giving this recipe a try!! Thanks for sharing!

we love fish. My daughter especially. I am super intimidated to cook it because it is easy to overcook and can be expensive. I am going to Wal-mart to buy that bag and I am going to give it a try.

Do you thaw out the frozen fish first or do you just pop it in to the oven frozen?
