Calling All Pasta Lovers…

…On a lighter note, I thought I would share this yummy and easy recipe for any of you Pasta lovers like me out there. I clipped this out of the coupon section in this Sunday’s paper and decided to try it out Wednesday. It was really easy and used everyday common ingredients which is always a plus. I used Penne pasta, b/c it’s what I had already, and it’s easier for little ones to manage better than fettucine or linguine… If you decide to try it, let me know what you think!

Chicken & Broccoli Alfredo

From: Campbell’s Kitchen
Prep/Cook: 25 minutes
Serves: 4

Ingredients:
6 oz. uncooked fettuccine *
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter or margarine
1 lb. skinless, boneless chicken breast, cubed
1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. freshly ground black pepper

Directions:
COOK fettuccine according to pkg. directions.
Add broccoli for last 4 min. of cooking time. Drain.
HEAT butter in skillet. Add chicken and cook until browned, stirring often.
ADD soup, milk, cheese, pepper and fettuccine mixture and heat through. Serve with additional Parmesan cheese if desired.

TIP: *Or substitute spaghetti for fettuccine.

    This is good for our email recipe club :) Sounds yummy. I don’t care for C of mushroom but I think cream of celery might be okay too? or c of chicken.. Thanks yummy… Now if anyone can find something wrong with that then they seriously have a bigger problem than they already do.

    I’ve made this several times before… it is REALLY yummy! The girls LOVE it. I am NOT a fan of COM soup either, but you really can’t taste it in this, I think. (Of course, I do add a bit more parm cheese than they call for…)

    Easy and delish! Def. worth a try. :)

    I have made some stuff kind of like this and if you want to be real lazy Tyson’s has the chicken already cooked and cut up in a bag in the frozen section and it saves a lot of time as well.

    Just letting you know I tried this tonight! ;) I couldn’t decide what to do for dinner then I came to check to see if you had any new blog posts and saw this and thought, “Why not!” I used whole grain spaghetti and added diced tomatoes…

    It was really very easy and pretty tasty! I made a ton and it was just me(Ryan had to work late) so we’ll prolly have it for lunch tomorrow!
