Date Night, yippee!!  I will NOT be cooking!!  :)

What an EASY week I have… with all our stuff going on I only need to worry about TWO meals!  Wowsa!  I am not prepping the French Bread Pizza ahead of time cuz I’m thinking the bread would get soggified with the sauce sitting on it for a few days, AND it is pretty simple and should be pretty quick.  I’m a big fan of good old Stouffers frozen French Bread Pizza, but I have never attempted to make my own.  :)

I found a new cookbook for only $3, and I couldn’t pass it up!  It’s called Once a Month Cooking! I don’t do my cooking once a month, but I loved that the recipes were already broken down for me in the Prep stage and Prepare stage! 

I am trying TWO from that book this week.  The Sweet Soy Chicken looks really yummy, and of course, you know that I wouldn’t pick it if it wasn’t easy, ha ha!  The recipe is calling for it to baked AN HOUR in the oven!  An HOUR?  Really?  I think I will need to keep an eye out on it so I don’t end up with Sweet SCORCHED Chicken.  :)

I decided to split this one and send half to the freezer. I’m sure one day my two boys will be bottomless pit teenagers, and I will not be able to fix ENOUGH to satisfy them, but now we are most definitely in the eat like a bird stage.  :)  

TWO meals this week in only 16 minutes!!  {I am loving this pulling meals out of the freezer!!!  It seriously is AWESOME!!!}

    Somedays I wish my kids were bird eaters! They eat SO much, it's insane and yet they are little toothpicks. I make the marinated chicken too..I love it paired with broccoli and rice. YUM!

    I LOVE your 5 Dinners in 1 Hour…what a LIFE SAVER for this busy momma! Thank you for all the wonderful ideas and recipes!!! Quick question: when you prep your black bean quesadillas are you cooking the onions and bean mixture first and then putting them in freezer bags or are you putting the ingredients in freezer bags first and cooking the mixture when you actually make the quesadillas? You might have already answered this and I apologize if I'm asking a question you have already answered.

    Anon… with Black Bean Quesadillas I do not do any cooking ahead of time… just put in the baggie and stick it in the fridge. Then at dinner time, I spread on the quesadillas and cook. :) So glad it will be a help to you. It has definitely been a HUGE help to me!

    Thank you so much for your response…it was very helpful. The Black Bean Quesadillas sound like a SUPER easy meal for those nights when we have activities. On Monday I tried your Honey Mustard Chicken and the family really enjoyed it…even my picky son ate it right up!! :-)
