Crockpot Chicken and Stuffing via Pursuit of Happiness
From the freezer… Crockpot BBQ Chicken via Fork in it
I’m excited to try the Crockpot Chicken and Stuffing since it’s really close to a baked recipe that my hubs cooked for me and my roommate back in our early days. What a sweetie, right?
I think that was part of his master plan to woo me… getting me to think he would cook for me.
It worked, though he normally only has handled the special breakfasts and of course, the manly job of grilling. :) Speaking of his manly grilling, his grill job of our Cheeseburger Sliders last week was magnificent. Oh my. I used the Hawaiian Sweet rolls as our buns, and they were just so very good!
I was going to try a new dish…Thai Style Tilapia but searched the store in vain for Peanut Sauce. I haven’t ever tried cooking anything with a Thai flavor, though Chris and I both are Thai fans.
On our Anniversary dinner after reading Trip Advisor restaurant reviews for Williamsburg, we decided to try Second Street.
We also got the Thai Poppin Shrimp as our appetizer because of all the reviews recommending it. They were AMAZING!!
I love using Trip Advisor by the way… so nice to check out “impartial” reviews from a third party source. It’s nice too since users can upload their own pictures, so you can see how a place/hotel/condo/restaurant REALLY looks instead of just seeing the official staged photos on their website.
Here’s what Chris and I had…
But since no Peanut Sauce could be found, we will have to wait to make our own Thai tastiness. Instead I grabbed this super cool looking bag of ready made Parmesan Encrusted Tilapia. It was almost the exact price of the regular tilapia so I figured I would give it a try. :)
Because of that, I only had one meal {that I divided} to prep. Woot! Kinda felt weird to have such an easy week. :)
13 minutes to prep two meals…

The recipes that you posted look yummy, I looked them up and will add them to my menu planning for next week. Thinking of joining the Menu Planning Monday and start creating post for it just like you do.
I have yet to find the peanut sauce at Walmart. I make a thai lettuce wrap recipe that requires the peanut sauce and it is delish. I have found it at Harris Teeter and BiLo though. Hope you find it and can do your fish that way!
